There are so many possibilities.
Venise Verte (around Coulon) if you've never been, is very different.
Futuroscope near Poitiers (if you're a film fan)... we've been twice and really enjoyed it ... though, to be fair, some others haven't ... our kids preferred it to Disney! Certainly a lot more interest and appeal to adults.
Bordeaux is worth a gander.
Are you staying near Bilbao? The Guggenheim is, of course, and absolute must, but Cantabria and Asturias offer so much ... Santillana del Mar is good and so is Barcena Mayor .... the Picos de Europa is a stunning area ... if you want any recommendations, have a look at a couple of me reviews for the area.
