You can avoid toll routes by going via Rouen/Chartres/Orleans/Vierzon then either cross country and down the free A75 from just north of Clermont Ferrand, or via the road which runs parallel to the A20 from just south of Brive le Gaillaird.
As far as pretty villages are concerned, there are so many that it would be hard to suggest places - but as we love the Gorges du Tarn area then I'd suggest you use the free A75 and stay somewhere around Aguessac/Riviere sur Tarn/Le Rozier and see the mediaeval villages clinging to the sides of the Gorges, the dramatic scenery and wildlife of the Gorges du Tarn/Jonte and Dourbie. From there you could do Girona in one day if you use the A75 and then the toll A9. The alternative goes through so many towns that it can take a lot of time.
If you cross-country from just south of Brive, towards Rodez then Martel is a pretty little place to stay, with a nice cheap municipal campsite, but really you'll be spoilt for choice. Why not have a look at http://www.les-plus-beaux-villages-de-france.org/en and plot your route by the villages you like the look of!
