If you want to go weekends them probably book by Feb/March or prices will rise. If you want to take a short crossing from Dover then there will always be space but the closer to summer you book the fares will tend to rise for peak time crossings. Cheapeast will be midweek late night. Tunnel is quicker but more expensive but you can pay all or part withy Tesco clubcard vouchers.
Definitely earlier the better. It has been the case for a few years now. It wasn't always the case back in the 90's but it's easy to get stung now by leaving things for a few months. Brittany in particular are sure of their market and are confident of getting late bookings at inflated prices.

How are DFDS with flexibilty? If I turned up early, would they let you cross availability allowed it?
They might let you on the next earlier crossing but earlier you might have to pay a surcharge or wait. They have tighened up on early arrivals. On the French side there is now a sign up directing you to the car park for an amendment if you are more that 2hrs early for booking.

We turned up early on our way back fom france in october. They let us on the earlier crossing as there was availability.
Thanks for the replies I will certainly get it booked soon then. May wait and see what club card vouchers I get and maybe the tunnel. I do fancy the quicker option as travelling from hull as it is x
