Whatever the length of time, one day or one year, you are abroad you will need the Passport signing and dating by a Vet before being allowed back to the UK.
I'm presuming you already have a Pet Passport and the dogs medical requirements are up to date.
As stated earlier if you are travelling in France you must visit a French Vet within 24 hours and 120 hours (1 – 5 days) of your train return departure time.
The Vet will give a tablet for the Ecchinococcus treatment (page 16 of the Passport) and sign and date correctly the relevant page.
They should also examine the dog to ensure it is fit to travel, and if you want your moneys worth, sign and date Clinical Examination (page 28). Signing is not obligatory but if the dog does not appear well when presented to the Custom Officers at the Pet Passport Office then they can refuse the animal on the Train/Ferry until a Vet has examined the animal. I think it's worth having the page signed just for peace of mind.
The further you are from the Tunnel/Ferries when you see the Vet it's usually cheaper – but not always!
The five day window for having the Passport procedure means you can still be almost anywhere in Europe and still get back to the Ports within the 120 hours allowed.
You must check that the Passport has been correctly signed and dated by the Vet as it is your, and only your, responsibility if it is not correct when presented at the Passport Office.
Most French Vets speak at least a smattering of English and many speak better English than you and me.

Eurotunnel charge £16 each way for an animal (Dog, Cat, Ferret) and the Ferries, I think, £15 each way.
If you are travelling abroad on a regular basis it is almost certainly cheaper than leaving them at Kennels/Catteries and gives peace of mind to have them with you.
It may look daunting at first but in fact is very simple once you have been through the procedure as many others who take pets abroad will testify.
