Do you want a over-winter pitch, or a  summer one?

Best way to get there, I would have thought, is to take one of the longer ferry crossings to Santander, Bilbao or the new LD Lines to Gijon, and then drive down through Spain and into Portugal.  Or you may prefer a shorter cheaper crossing and a drive down through France, making this a part of your holiday.

There was a little rural site mentioned on here some time ago, when they were asking advice for attracting guests.  It's called The Chicken Run, set in rural Portugal.  I think you'll find a lot of Brits there, and it's run by Brits, so that may not be your thing!

Otherwise have a look on the Alan Rogers website where there are reviews of Portugese campsites, and some mention people overwintering or longer stays.

What about southern Spain? There are generally more flights, and more likelihood of getting there and back for a weekend.

Is it really going to be worth it, even if you could find flights, to just go out for two nights.  I can see the point for the five week holiday.

There are Easyjet flights to Faro from Luton, but the timings don't find your requirements and obviously if you have such strict times it's going to be difficult to find exactly what you want.

Does it have to be Portugal?  Looking at the Ryanair website, you can get a Friday afternoon flight to Murcia, and then a Sunday evening flight back from Luton, but a return flight in June will be £153.00 each!  You could perhaps find a site near to Murcia which would have facilities to store your caravan and then use it there instead, or you could find one of those companies who offer to tow your caravan to site and set it up for you when you need it to be on site..
