Do you want a over-winter pitch, or a summer one?
Best way to get there, I would have thought, is to take one of the longer ferry crossings to Santander, Bilbao or the new LD Lines to Gijon, and then drive down through Spain and into Portugal. Or you may prefer a shorter cheaper crossing and a drive down through France, making this a part of your holiday.
There was a little rural site mentioned on here some time ago, when they were asking advice for attracting guests. It's called The Chicken Run, set in rural Portugal. I think you'll find a lot of Brits there, and it's run by Brits, so that may not be your thing!
Otherwise have a look on the Alan Rogers website where there are reviews of Portugese campsites, and some mention people overwintering or longer stays.
