I really wouldn't spend too much longer making up your mind. Beachside sites are very popular. Accommodation and pitches may well be booked at the end of one season, for the next season. Don't be downhearted if you try several campsites and don't find availability - but ask if they can keep you on a 'reserve' list for contact in case of cancellations.
Whilst there is absolutely no problem not booking in advance during April/May/June early July or late August/September/October, and sites will almost always have pitches (even if no availability in mobiles, unfortunately late July on a beachside site is a time when you need to get organised in advance and book early.
If the worst comes to the worst and you can't find availability on any of the sites suggested, then just go to France, take your tent, and choose inland sites within driving distance of the sea. My friends are teachers and always holiday in late July/August, taking their own tent, and have had no problems, but they don't mind rural, or in out of the way areas.
By the way, in response to your question about private bathrooms, here's an old thread on that subject. We've just booked a pitch at Champs Blancs on the Mediterranean (though not beachside) with a private bathroom, using Camping Cheques at no extra cost. Unfortunately this isn't the case in July - when you'll have to pay extra.
Perhaps a tip for next year is to think about holidaying during the last two weeks in August, when sites in France become less busy and you can turn up without booking even on most sites, even those with direct beach access.
