I'd agree with Warbis - the Tarn or Ardeche areas, with perhaps the favourite being the Gorges du Tarn area, as I think it's quieter than the Ardeche, towards the Millau end. The scenery is stunning, the wildlife amazing, with vulture soaring overhead, beaver in the river, and more birds, butterflies, and wild flowers than I've seen anywhere. There are beautiful mediaeval villages to look around, the Knights Templars garrison villages, such as Ste Eulalie de Cernon, La Couvertoirade, La Cavalerie (being restored) and others, and lots of rivers for finding that perfect picnic and bathing spot. The three gorges - Tarn, Dourbie and Jonte all flow through that region, and each one has it's own spectacles.
The end towards Millau is more open, and therefore gets more 'sunshine hours' as the sun doesn't go behind the steep valley walls quite so early in the evening.
Another advantage is that you're within an hour and a half of the Mediterranean, and the Camargue, so can have a day out with a real difference.
