I say aray but hear others pronounce air.

You can also 'listen' to google translate if there is any word you're unsure about.  Just type it in and click the 'loudspeaker' button.  It's very useful for some words - but does give the standard pronunciation - as SGT says some words sound very different with different dialects.

The French of "yes" and the pronunciation taught in British schools seems to generally be "wee"

When you get to La Belle France, you find out that it seems to be "wahy" That's the best I can do phonetically. The included "H" softens the letter "Y" of the word "way"

Poor Mrs B. speaks reasonably good French by British standards but we've had people begging her "Please Madam, please speak English"

how do you pronounce aioli? I tried getting some on a kebab and just got WTF looks off the person serving and the ten other people in the queue, I ended up pointing to mayonnaise just to escape!

HAve a go with Forvo link above - if it gives you more than one person's pronunciation you can look on the map to see roughly where they live and so also gauge the accent.
