Any suggestions where we could have a one/two night stopover on way to Interlaken , Switzerland - we will be coming from Calais. Either in our own tent or preferably in a tent already up.

It's just over 500 miles, but how far you get on day 1 depends on what time you arrive / leave Calais.
There are campsites all the way along the road if you want to use your own tent, or reasonably priced hotels as an alternative.
We just need to know where you want the stopover to be.
When we went to Interlaken we stoppoed over at Camping Birkelt in Luxembourg. Nice site. We used our own tent, but noticed the UK operators there with pre-pitched.
I don't know if you've booked Interlaken yet? I think Eurocamp have pre-pitchted tents at Birkelt, but I think you'll only be able to book these as a stopover if you book your main site via Eurocamp Independent.
