Don't forget to leave a review of the French and other European campsites you have visited!
If you are just passing through the Netherlands on the way from the ferry you will reach the German. border in under two hours so don't need to stay anywhere. But if you wish to stay then one of the Amsterdam sites will let you explore that city and your ACSI guide will give you choices in other places. There are sites everywhere.
You will probably be on motorways all the way - toll free but busy. Wikipedia has pictures of the road signs. Does that help?
Roads generally well designed, well maintained and well signed. The pdf linked from here might be a bit out of date but will give you some idea of their "Highway Code".
Plenty of sites listed on the Camp Site Search pages, so if, as Berriow suggests, you wanted to see central Amsterdam, you could take a bus from this Landsmeer site, for example.
Unless you particularly want a specific site, I personally don't think you'd need to book in advance for those dates.
Have a look on the CampingCardACSI website at their list of discount card participating sites and the dates of acceptance, as the individual site operator will obviously only accept the card at times when the site would otherwise be expected to have few guests.
We stayed near Maastricht, not far from the border, at a little campsite called Camping Meerssen on our way to Germany last year. Pleasant little town, easy access by train to Maastricht, close to Valkenburg and other places to visit in the area and very friendly and helpful owners. About 130 miles from Rotterdam, motorway all the way apart from the last few miles. We found the journey was fine, especially travelling at a weekend when there are virtually no HGVs on the road, though we found some of the motorway intersections, where different motorways meet, a little confusing at first. Just took it steady and soon got the hang of them.
Breakaway cable through ring on towbar. If hole is too small use large carabiner through hole & cable looped through that. Fine in Holland for breakaway cable looped around towball.
Regarding the roads and road signs, it might be helpful to have a look at part of your intended route on Google Earth so you can see what the roads and signs are actually like before you travel.

The Dutch have Ascension day/Pentecost holidays and this year these fall between 4th and 16th May. We found some sites much more expensive during this time.
