Norway is hugely expensive.
Cheap & light mat - the Multimat UK made closed cell foam mats. Any of their CCF mats will be ok for summer unless you want more comfort which equals more money especially if you want light as possible. For other option that won't break the bank for both mat or bag look at Alpkit. Have a good rep for value for money, decent kit at reasonable weights.
Food wise I'd go with supermarket foods as specialist 'lightweight' food is expensive & not usually any better, lighter or any more calories or quicker to cook. Packet pasta's etc & even meals in a bag that just need heating up ('look what we found' meals). Not tried the latter as too heavy for me.
