Booking or not booking depends on when you're going. If you want a particular site, and are going in the four weeks from mid-July to mid-August then I would book, particularly if it's a 'must stay there' site. If, however, you just want to go 'somewhere' then in many areas you will still find plenty of available pitches.
We arrived last night, in the Ardeche, to meet up with our son, and have found a pitch on a lovely very 'French' site with river access, and there are still about fifteen free pitches available. It's costing us about £14 per night, and we are the only British people here, the majority of the rest are French, and there are two Dutch caravans. It's not on UKCS and perhaps it will remain 'our secret'.
