We are swithering between France and Scotland so haven't booked Irish ferries yet. We also need to book kennels.
If we are going to Scotland, I see that camping in the forest are taking bookings for 2017. I already have a rough itinerary going Larne to Stranraer.

I looking for next year and feeling very excited 😄
We've been living in the Middle East for 3 years, I got back July, hubby still over there.
First thing I'm doing to looking for a decent tent and French campsites, literally can't wait, we loved it every year, last trip was 2012.
Athough we'd end up having some kind of trauma, it's given us lots of funny storied to tell x

We stopped booking a few years ago but this year I did book a couple of sites. My OH has a slipped disc and is a lot of pain all the time, so rather than move around as we have the last few times, we decided to pick just three places to go. One is next to the Puy du Fou and is very busy, the other is on the Dordogne.
We have been lucky as we can go for longer and once the kids had grown up they were happy to stay on municipal sites, or less popular sites, as we don't want all singing all dancing sites.

I've often expressed the opinion that one of the great attractions of camping/caravanning is the ability to come and go as you please. Even when we were both working and the children were at school, we never booked more than a week or two in advance - there was simply no need.
Now we have retired, it's even easier just to pack up and go , especially off-peak.
I've also learned that if you want something, it costs what it costs. It's nice to have a rough idea, but I'd hate to let cost ruin a holiday. Just look at the fluctuations in the exchange rate. Prices are hard to predict.
By all means, spend your winter evenings looking at maps, site guides and brochures (showing may age now - I suppose there's an "app" to do it all), get a few ideas, but keep your options open and don't book too soon. You might change your mind.
