Well in Chartres there are the usual budget hotel chains, but prices tend to be more expensive in the city than many others in the chain, because it's a tourist destination. There is a Premiere Classe, and an Ibis (both of them fine for overnight). Ibis has two classes of hotel, one which is usually called 'budget' and the rooms there aren't as good, nor does there tend to be a restaurant in the budget versions. However, they are usually close to the chain restaurants such as Campanile, Courte Paille, and Pizza del Art.. The 'normal' Ibis, and Premiere Classe will probably be around £45.00 plus two x breakfast
Not knowing what your budget is, I would say that if you're not tied to a very low budget, then in Chartres spending just a little more will get you something with more character such as https://www.lejardincathedralechartres.fr/, just a short walk from the Cathedral and the town centre, and just the most beautiful place. When you take a budget price hotel, then add on breakfast, and the fact that you'll be in an 'office/retail/hotel park' I would pay just a little more for character, luxury, convenience, and parking right at the heart of things.
We always use booking.com, and as I said, sort first by price, and then go down the pricing until I find something with a higher than average review score, have a look and see what it offers, as these days we would rather go for character than price. We also tend to find somewhere just outside the town (although the above recommendation is an exception) preferable where they offer an evening meal on arrival, to save us going out for the evening!
