Yes, that's a popular winter route. Sites along that way which are open in January include ones near Dreux, Le Mans, Tours, Poitiers, Bordeaux, Urrugne (at the border) and Zaragoza, but an internet search will find more open all year sites which are not necessarily in your ACSI guide.

We used to go down the middle of France, first night at Rambouillet near Paris, second at Le Bosc, just off the free A75 near Lodeve in the south of France. Open all year. Not fantastic, but open!

Trevor, There are even more open in winter than that map shows - two for example on your route south at Le Mans (Vieux Moulin and Bounty Lakes) - but a phone call in January is always worthwhile to make sure the site owners haven't gone off on holiday to the West Indies.
