Thinking of coming back the way, around Zaragoza, heading over Pyrenees over to pau, with caravan in tow, is this a good way

Yes the Somport Tunnel is a good easy route. The Spanish side is better than the French side which has quite a few bends etc. but nothing to worry about. We've been through there in the winter with snow piled up on sides of roads but actual roads all cleared.

Use the Somport regularly, came back to France last week on that route, no problems at all, good scenery. Would say the Irun route is a tad faster, but we just prefer the Somport, normally the traffic is a lot lighter.
If you are using Somport tunnel mid summer it might be closed for maintenance but no probs with a caravan going over the top. Follow diversion sign from coned off road in front of tunnel. Nice places to stop & look at view & ski resort just on Spanish side is worth a look. Eerily empty in summer.
Nice muni campsite a few miles into France. You will see it signposted on left.
