Try the Knaus Campingpark virtually in the city centre.
Lovely small city with plenty of small good restaurants.
Buy a Rhineland Pfalz rail pass - cheap hop on, hop off travel throughout Rhineland Pfalz and Saarland.
BTW, I think you'll need an enviroment zone plakette for Koblenz.

Another vote for Knaus Camping. We have stayed here a couple of times. A Liddle supermarket is just up the road. A small boat takes you across the Mossel to the city. Admittedly it is expensive but the facilities are great. It does get busy ( booking available) I usually email a few days before and get a confirm in english within minutes , The Aire by the entrance is always full .
I always recommend Landal Warsberg in the town of Saarburg on the river Saar which joins the Moselle nearby at Konz. The site is at the top of vineyard slopes and has great walking plus it's own cable car down into the town below, where there is a Lidl.

Arthurdent, Saarburg, as you correctly pointed out is not on the Mosel, but the Saar. It really just depends whether you want to be on the Mosel, or just in that area.
If it's specifically the Mosel, I would also recommend Bernkastel-Kues. Unfortunately it does not have a railway station, so you would need to drive to other places.
