So, we are going to the Netherlands at Easter and we were thinking of stopping near Amsterdam for a few nights. I’ve found 2 campsites which are about 30 mins from the centre by bike. Both sites get decent reviews but can anyone tell me which one would be best to stop on or if there are any other campsites that they would recommend.

I have stayed at the second one of your two sites (which was well run and efficient) but not the first, so cannot give you a comparison. We went in and out of the city by metro so I can't tell you about a cycling route either. . I'm not much help, am I ? Sorry.
On a well known Dutch review site (can't link to it) Het Rietveen scores 5.9 and Gaasper Camping 7.2. They can be translated into English and generally Het Rietvcen fails on the quality and quantity of the showers and the high price - but not much else. Read them for yourselves and it may help make up your mind.
We went to Amsterdam in October with our two sons and large caravan. We stayed at Camping Zeeburg, and can’t recommend it enough. It was faultless, the showers were amazing and spotless. The staff were very friendly and nothing was too much trouble. Food in the restaurant was really good. It’s on the river and 5 min walk to two tram stops that take you to opposite sides of the city. The location was very easy to find and drive our twin axle 8ft wide caravan to! We took bikes but I’m a little nervous so we only used them once when we ventured further a field into the country side.
The last time we went to Amsterdam we stayed at Camping Het Amsterdamse Bos. Its walking distance to the Metro. If I were going again I think I would give Camping Gaasper a try as I think its nearer public transport and a bit nearer the centre.

Does anyone know if you can just turn up at Gaasper Camping as we are wanting to go for 5 nights!?!

You could take a risk as campsites near city centres often have a fairly high turnover of pitches, however you will also need a plan B!
