Can't argue that AC is the best way, but doesn't have to be a dedicated roof mounted unit!
Another one who's not a huge fan of heat, well probably more the high humidity that often goes with it! REALLY can't get comfortable or sleep well in hot sticky climates!
My solution for dealing with those times where it's likely to be too hot for me is a portable proper Air-Con unit, I bought it last year, and used it in anger for first time in the van this month. I've had a 'portable' (well, you can wheel it around, but it's a very heavy lump to lift, and quite large!) Air-Con unit at home for years, but this new one is much smaller, and lighter, so really can be regarded as portable.
Used the caravan a few times in UK where it's been pretty uncomfortable, not as yet used it abroad, but that is certainly not an impossibility. Can't really justify the high cost of a dedicated caravan air-con installation, and it's permanent weight penalty on my already meagre load capacity, so the portable unit gives me flexibility to only carry it when needed, and at around £280 purchase price it was relatively cheap. When not in the caravan, it gets used at home, so I do get my monies worth out of it!
It's a compact unit that doesn't totally block the 'aisle' in my van, the extractor hose goes out of the roof vent directly above it (improvised at moment, but I will make a custom fit adaptor), it has a remote control, so I can turn on/off/adjust whilst lying in bed, or just lazing on a couch. It's compact enough that I can stow it when not used on the lower bunk bed beside the dog crate (I never use the bunk beds for sleeping, only used as 'shelves' for stowing stuff. It's light enough to carry (for me anyway) in and out of the van with ease, and it's power consumption is low enough to work on a 10A or better EHU.
On it's first use in the van this month, when up in the Peak District, it was brilliant. I found I didn't need to run it through the night, once it had cooled, and dehumidified the van in the daytime/eve, the cooler night time temps were tolerable. I don't find the fan noise disturbing when used at home when asleep, so no reason to think I couldn't run it all night if I needed to in the van.
Two points in favour of a proper Air-Con over those water/ice Air Chillers, first is, a proper AC reduces humidity, which goes a LONG way to improving comfort levels, whilst the air chillers potentially increase humidity! Secondly, how effective the Air Chillers are depends very much on ambient humidity levels, as they rely on the evaporation of water to give a chilling effect, but if the air is near saturated already, there will be little evaporation, and therefore little cooling effect, it's effectively just a basic fan blowing over ice, if it has it, and for as long as it lasts, then it's just a plain fan!.
I did look at the dedicated Caravan/MH 'portable/removable' AC units where you hook one half outside a window, but discovered they have no dehumidifying function, so not as effective as a 'proper' AC! Looking at the cost/size/weight, they didn't seem to be such a good alternative to the AC unit I finally bought at far less cost.

Adding to all the previous advice on windows open etc. etc., my van has blown air heating, BUT seemingly not know to everyone, you can also blow cold air through the ducting vents, and very effective at cooling the van it is too! The air intake is under the van, so drawing in relatively cool air from the shady underside of van.
