I can vouch for grass snakes going into the water and eating fish - they have had my goldfish, and about once a year one of the beggars gets caught in the net which is supposed to deter the herons. I take pity on trapped snakes and cut the net away so they can escape. Am I mad??

just got back from france and can honestly say i spotted many snakes in many guises  but most were easily identified by a small blue marking  with yellow stars at the rear

Never seen a snake in the UK - and I'm over 60, but to my astonishment last summer I saw one swimming in a river, La Sarthe, to the east of Alencon.

We encountered a baby viper on the beach in the vendee, just South of Brem Sur Mer.  Only about 15 inches long. Weird behaviour - it wrigled down the beach towards the sea in the middle of the afternoon on a hot day. Some daft teenage boys were teasing it and an innocent younger bystander got bitten. His even dafter parents were not going to do anything about it, but we asked the lifeguards to come and they killed the snake (chopped it in half with a shovel much to the little ones' horror!). An air ambulance took the boy to hospital as the lifeguards said it was a very poisonous snake. We stayed on the path after that; no more forays into the bush. despite seeing no more snakes in the several visits since, our kids will forever refer to that place as "snake beach".

Generally speaking, if it is sandy environment such as beach, dunes or heathland and dry, it'll be adder territory as the normally eat warm-blooded creatures such as mice and voles but will take sand lizards.  They hunt by sensing the warmth of their prey via two special pit sensors in their face.

In more green verdant areas with ponds, rivers and wet ditches the snakes will be normally grass snakes whose diet is more inclined to be amphibians such as frogs, newts, toads and, yes, occassional fish.  These snakes constrict their prey before swallowing and they are remarkably good swimmers with their heads just above the water.  A good population of frogs will sustain  a lot of grass snakes and they are not normally territorial. and groups can be seen.

The poisonous vipers (Adders in UK) wait for poison to debilitate their prey before swallowing.  The rarer smooth snake is more inclined to the dryer territories but, same as grasssnake constricts before consuming.

To see snakes your need to be very quiet and walk very softly,  Make any noise and the efforlessly disappear.  Hope this helps.

I think you and your kids will be fine with normal precautions - not something which enters my radar and I've had my kids in Brittany, Loire, Aveyron, Vendee etc and this year heading to Gard.  We saw a live grass snake once in the Tarn - my Dad got really excited and insisted he remove it with a broom handle - hilarious - must be a macho thing!  The only other live one I saw was in Greece when a cat caught and brought us one as a 'present'!  We went on a walk from Limefitt Park near Windermere a couple of years ago and the track went past a little reservoir - there were loads of signs up saying watch out for nesting adders/vipers (?) but we saw nothing despite looking carefully!
