to get an island bed you are going to have to look at 4 berth caravans, of which there are plenty of them around, you are best going to dealers and just having a good luck at layouts LEAVE YOUR WALLET AT HOME! your only looking for now, try to imagine living in the on the worst of the rainy cold winter days, then after that you need to make absolutely sure it hasnt got damp issues by taking a damp meter and checking absolutely everywhere. make sure that you see everything working fully

Have a look at the caravan finder website. That shows layouts and will give you an idea of the models you could be looking for.

I'm 6'4" as well and haven't had a problem in several caravans. Worst was the fixed bed which I found too narrow for us both. I've always coped in a small world by being expert at ducking doorways etc and sleeping slightly folded or slightly diagonally across a bed.
Our last caravan had a 6'2" long single which I found OK.

we have a 6 berth caravan with fixed bunks (i have kids) but i hated making up the double bed at the front so much (and it wasnt comfortable) that i took ut the cushions and put a regular double matress in the frnt so i now have a fixed bunk fixed double caravan. i am also 6'4" and can lie out flat on the bed. if the fixed doubles are too shourt you could maybe get a 4 berth with a rear dinette and put a regular matress in it although i guess a 6'3" bed wouldnt really be a problem. my sisters partner is 6'7" and when he has been in my caravan he cant actually stand up because his heat touches the ceiling.

I've yet to come across a caravan that has a fixed bed that's as big as a domestic double, never mind a king size. Personally I'd (and have done) abandon the idea of island bed and instead look for a caravan that has a big front lounge, that you can make up into a king size bed (in less than 10 minutes - I don't find it that much of a chore). Spend £100 or so on a mattress topper and you'll have all the comfort you need.
