you dont say how old your van is, there are 2 systems used on british vans one is the microswitch system and the other is the pressure switch system, you need to determine which system you have.
have a lok under the sink ,maybe using a mirror, are there any wires going to the tap.
if no wires then you have the pressure switch system, and if the other taps are working then the problem will be the tap not letting any water through , the taps have a cassette system, maybe its been put together wrongly, but it should dismantle from above by removing the grubscrew from the handle then the handle, the cassette is in there
if its got wires, then set the pump going using one of the other taps then open the sink tap to see if water flows, if it does then its deffinately the micro switches
------------- I predict a riot !!

Bailey Phoenix is a fairly modern model and not likely to be microswitch controlled, it's likely to be a pressure switched system and any tap opened will run the pump as pressure is dropped. There is a possibility that the internal ceramic valve is broken in the little cassette inside the tap body. They can be puchased cheaply almost everywhere on line. Have a look here

This is all good advice. However, if you’ve just got a new van, it will be worth getting an engineer in to do at least a habitation service, and (depending on when it was last done) the mechanicals too. As you say you’re not confident with DIY, this will a) get the tap fixed b) give you confidence in the rest of the gubbins, and encourage many happy days of camping ahead. It’s £250 or so well spent.

At this time of year you must make sur all water is fully drained out. If not it will freeze and cause all sorts of problems. This includes the toilet flush system as well.

Doing a descale (remove limescale) with white vinegar or citric acid when you sterilise the system can stop a lot of problems.
