Confusion has been created over this outside cover even though you said clearly you were running on electric.

On electric you do not need to remove the cover. On gas you do need to remove the cover.

We have had the same problem with ours on electric, We have 2 knobs side by side (outer on/off and inner for thermastat for electric and on/off and temperature for gas) at eye level and at ground level 2 separate rocker switches marked, Thermastore and Thermaheat.  For the water to be heated by electric we turned the knob on, wattage to 500w and when we switched the rocker switch on the thermaheat the green light came on on the upper level knob and red light glowed on the rocker switch but the water did not heat.  We then did as above but also pressed the rocker switch on on the thermastore as well, lo and behold in half an hour we had very hot water!   Why?

On gas we just select the temperature dial then the on position and if gas is coming through ok it shows green light on the dial. If the gas is not getting though it will turn red in 10 seconds or so.

When you use the hot water by electric you do not need to touch the dial at all this is for the gas operation only. Heating by electric should simply be a matter of switching the emersion heater on? Well this is the case for caravans I have seen and owned.

just been out to check mine. There are two controls adjacent to each other. The rocker switch with red light above. Turn this switch on for electric heating. Red light will come on to show it is working.

The adjacent control labelled "truma ultrastore" is for gas operation only.

for gas operation remove external cover. ensure gas is on, select temperature on rotary knob, switch on the small slide switch (slides up to on position). green indicator lamp "operation" lights up.

If there is air in the gas supply it may take a minute to light up. if the appliance switches to "failure" during this period switch off the appliance & wait 5 mins then switch on again.

This is all as per the instruction book in my hand. For a 2005 van I am surprised you didn't get all the books

When you get back & possibly prepare to leave it for winter don't forget to drain it all fully. I didn't first time & needed new taps in the spring.

Drain hot water tank you will have a drain tap close to it

Drain taps ( put them up in central position

Empty toilet & flush

Drain shower pipes

If I have forgotten anything someone will be along in a minute to correct me.

You can leave the fridge door ajar by propping open with a latch near door catch which keeps it open 2-3cm to keep air circulating around and stop mold etc.
