Performance will be inadequate. Max tow weight might be quoted at a tonne but that is just a technical figure based on what the car can physically tow taking no account of real world road performance. As I said best caravan would be no more than a Freedom but Puck would be better for low power/torque of car due to better aerodynamics.
Is car diesel or petrol? Diesel will probably just about do it.
As Tentz says, yes you are within towing limits for the Elddis Explore 302 but your Polo engine just doesn't have enough "grunt" and you will find it very under powered.
A Freedom caravan would be a better choice but just be aware that some models like the Jetstream have very low payloads (only 70kg)
Alternatively, you could go vintage and find a good condition classic caravan from the 60's or 70's as some were designed to be towed by cars like the original Mini.
If its petrol it would struggle with that caravan although it would be legal to tow it so your choice really. Its not really an ideal car for towing a caravan of any size.
I had a 2007 1.4 petrol Grande Punto and used to tow our last van an Abbey Solitaire with max weight of 1000kg, it did it fine just took some getting used to but didnt really go over 50mph on motorways but would go 60mph if needed to.
I towed with a 2 berth 1980s caravan Peugeot 205 1.9 diesel a couple of times. On paper it was more than adequate but in reality it was a terrible tow car. I can only envisage a petrol Polo being far worse
