When I was looking at vans to buy I made a very concious decision NOT to get one like yours as I just couldn't see a way of keeping shower water under control, and didn't fancy the cleaning up in every nook and crannie after a shower. The ones with shower curtains were just ridiculously snug for a bloke my size, and I'd end up wrapped like a Egyptian Mummy in the curtain, opted for a van with proper bathroom and full size shower cubical for ease of use and cleaning.
As to what you can do to minimise mess, depends on your actual layout (you don't specify your van anywhere - always useful when seeking advice), does the shower head pull out/extend from the sink, and is the sink over/near the toilet etc. You could perhaps use one of those extending curtain poles that wedges between walls (no need to make any fixing holes in ceiling for curtain track!) to hold a shower curtain to at least minimise soaking toilet area, something like this:

Relatively easy to fit and remove each time you need a shower if need be, so doesn't have to be in the way for other uses of the bathroom.
Hopefully drain hole is opposite side of cubical to door, so pitch van with a slight slope away from door to encourage any water to drain away from any gaps at bottom of door. Some vans have sliding/concertina doors that have a channel at the bottom that does act to contain water in the cubical to a degree. The amount of water that comes from caravan showers is considerably less than domestic showers, so unless you have the slope of the van wrong or an obstruction to the drain (even standing on the drain hole to block it!), you really shouldn't get a great depth of water in the floor tray, splashed water will be your biggest problem.
