As previous posters have said it depends on you, what you are used plus a number of other variables (weather conditons , time of day , type of road , etc) For me I aim for up to 6 hours max with breaks every 2 hours.
On french autoroutes you can easily do 200 in the morning then a little cheese and baguette then 200 in the afternoon!!
Calais to the vendee for example or Calais to around Macon/Dijon if heading south is do-able, we have done both but I do drive a lot with my job so don't find motorways stressful at all.
But remember you are on holiday! so why not stop at a lovely municipal on the way and chill out with cheese/baguette and vin de plonk!!

That's exactly what we did last year from Calais to the Vendee all on the Peages ! It cost a bloomin' fortune ! Plus we were really really tired when we got there ! We would NEVER do it again - it was far too much in one day !!

We have done bouts of whole days in the car, just stopping for toilet/quick sandwich, but this has mostly been our mis judgments with distance or getting lost, we are getting much better now and try to plan our journeys with plenty of over night stops! Its no fun driving for hrs and hrs!
done salou in 2 days from dover. The roads where fantastic, I was ok, but the wife was tired out, and she dont drive. No way i would do it now. at the time I was meeting up with family. coming back i took my time, did it in 3 days to dover, had night down there then next day back home. I loved it. done la rachelle in a day with no van on.7am home at 10 pm.

Loads have people have got the right advice as explained earlier, but i reckon it depends on where you want to be and the speed you want to plan on.
I personally go for max distance/vs fatigue, but that's because i'm always headed for the med. 450miles is my 'i've had enough' moment, plan for ave 50mph on French Motorways....
We are all different in this aspect, I have driven Barcelona to Calais in one day 825 miles on several occasions but never have managed Calais to Barcelona in less than one and a half days. Traffic always seems heavier and I'm not so relaxed. I work on hours and tierdness. I'm a lot slower now with a larger unit and restricted to a lower speed limit.
Do whatever you're happy to do in the UK. Don't overstretch yourself with over ambitious travel plans. Of course you can cover greater distances if there is two of you to share the driving.
If you're happy doing a couple of hundred miles a day then reckon that the South of France will take you approx. three and a half days from Calais.
You will read here of people doing the same drive in something like twelve hours but my bet is that once arrived at their destination, they will spend the first three days of their holiday getting over the journey.
