It might not be too sophisticated but for a non-professional who just wants to watch for early signs of water ingress or check out a prospective purchase it's all you would need in my opinion.
Caravan wall board normally has a vinyl covering stuck to it , if you don't pierce this covering with the probes you won't be testing the wood beneath .
