I used to double up on the plates as I suggested but I now use a towball with a bigger measurement between the mounting face an ball centre [it is not an Alko stabiliser ball]
I cant thank everyone enough for the responses we've had to our 'problem'. We're going to have a thicker plate fitted to start with and see what happens. Should perhaps explain the plugs are bent forward and inward toward each other as opposed to being pushed backward under the car. Is it possible the hitch can catch the tow plate in such a way as to bend the electric plug things inward - so that they are almost facing each other?

Definitely sounds more like "errors of judgement" than vandalism to me. Anyone going out equipped with some kind of tool to commit vandalism would surely do a lot more damage to your vehicle than just bending the plate on your tow hitch
