We have something similar with our Lunar - we have never regretted buying this layout for a second!  Ours were 3 & 5 when we bought the van and I bought a baby guard for my son to sleep in the middle bunk - we use the bottom bunk for storage or when other kids come away with us (these bunks are pretty generous too). 

As mentioned above its a practical area daytime for the children to play at using the dinette and eat at if the weather is poor and at night it all closes off and becomes their bedroom allowing us to watch a bit of tv or play games up front without bothering them.  We've only had the dinette as a bed once when my dad came away with us and it made a very generous comfortable single.

Our washroom has a separate shower which we didn't think would get used much but it has been a godsend to quickly shower the kids and even I will use it on a fully serviced pitch.

We only planned to keep it for 2 years but I can see us keeping it for maybe another 2 as we haven't outgrown it yet and if we do get another it would be same layout but double bunks rather than triple so the the children who are now 8 & 5 get a little more headroom in their bunks.

Deffo go sit in some and imagine what you would be doing. find a retailer with huge choice and even if they too expensiveor too cheap remember you are looking at layout and once youhave the layout sorted you can get technical with age, cost features etc. Most retailers will expect  people who practice sitting down to eat or go to the loo without waking the kids or cooking on the tiny worktop or getting 4 of you around the table etc. A few considerations-

If you have a sep dinette it means if the kids get up you can sit them down before you have made the main bed back to seats.

Side dinettes allow extra worktop space within reach if the kitchen

Fixed bunks or even a dinette you choose to leave as beds means whn kids are tired th bed is ready and there is no faffing about.

Some vans with end dinettes have a rear window making them very light and roomy.

Personally I would prefere a washroom to a shower cubicle that I dont use as we always use sites with nice blocks. A wash room allows the luxury of a quick rinse of a muddy child and a bit more van space.
