Yup as I said earlier I am using a good quality spirit level to check it.

Also as said earlier soon as I can be sure it's fully level I can add a small level to a fixed point and shim it so I always have a known level reference point :)

A bit tricky on an older van as you can never be sure whats still level and whats not

I have a 23 year old van and have found that trial an error is the name of the game. In the end, I found that for the fridge to work and the sink/shower to drain correctly, the level indicator device is best placed on the floor of the gas locker. It will differ with other vans of course.

Very fortunately for other reasons it is not a "wooden box". However, if it were I would dump it if it twisted out of true significantly enough not to be able to use the sides being vertical for levelling purposes. Being in that state it would be unsafe to tow.

Surely if the chassis is level then the floor is too. The waste water drain pipes are fixed to the floor so the floor needs to be level or sloping slightly towards the waste outlet. Any distortion / subsidence of work surfaces are irrelevant. I use a couple of pieces of decking board for levelling side to side on grass pitches. On hard standing I assume the pitch is reasonably level side to side

Always placed level on top of the fridge , as long as this is level my beers will be nice and cold !!!

My beers live in the awning I don't like this trend for beer so cold you can't taste it properly. Ambient is just perfect

But that isn't the top of your fridge, it's a worksurface fitted over your fridge.
(in our case the fridge sits under the sink's draining board & that is supposed to slope.)

We have a couple of worktops in our van, and the spirit level gives different results on each one - and it even changes depending upon which bit of the worktop you pick.

I go by the sink and the cooker hob, especially the latter.

There's nothing worse than a sloping frying pan.
