Not really sure whether you have a particular problem or just need reassurance. If the latter, make yourself a checklist for hitching and unhitching - print it out on your computer and, if possible, get it laminated. After three or four times, you'll probably never need to look at it again, but it's helpful for reminding you about things like breakaway cables.
There's general advice on coupling here. For uncoupling, do the reverse - but also remember to ensure the caravan isn't going to roll away once it's unhitched, so handbrake on and, if necessary, chock the wheels. Also, remember that if you're pitching the caravan, it's a good idea to get it level before unhitching...
