Personally I always leave the handbrake off when stored, I did once have a brake stick on over winter and it was a right to sort out. When stored it is locked onto a hitch post on a level drive so pointless putting the brakes on.
When pitched, I normally pitch sideways on to a slope, using a single levelling block with a wheel chock, and therefore usually don't bother with the handbrake. (One advantage of a small caravan.) If I have to pitch nose up or down a slope then I use the handbrake. We never stay long enough anywhere for it to stick on.
