We've just covered ours up for the first time this year, because it's stored on a very exposed site which can be dusty in dry weather, and get terrific lashing rain in wet weather! So far it's been on a month, and underneath the cover the caravan is snug and dry, doesn't smell musty at all, and is still immaculately clean.
We'll wait and see what it's like at the end of the winter. We do keep going up to open it up, so make sure you get one with access zips which make it easier to get in and out of the van.
I think it you cover a van which already has any damp (which is usually between the inner and outer skin and doesn't evaporate naturally, very quickly) then you might be inviting problems, unless you're rectifying the cause of the damp at the same time as covering the van.
