I suppose if I was going to use EHU, then I would take as many apropriately rated electrical cooking appliences with me that I could, but I would have to consider their size for storage. However I try to cook on gas only and so, if I did want to steam my foods, I would consider using a Pressure Cooker. That way, I would not only gain the advantage of steamed foods, but I would also reduce the cooking times and therefore the gas usage.
Pressure Cooking does seem to have gone out of fashion these days but with one of these inside it for the veggies, I doubt if you could cook a full meal faster.

I've also done a lovely pasta meal this way: just using the base pan and one steamer
Pasta twists in the bottom, froz veg steamed on top (or fresh veg, but don't use root veg unless cut up very small), then drain the pasta in with the veg, return all to the base pan, stir in bottled reeady-made pasta sauce, mix all together and stir/simmer for another 4-5 minutes. Then serve.
We have a Morphy Richards 48810 Intellichef multi-cooker, it steams, boils, slow cooks, fry's and just about sings an opera if you wish! No seriously it replaces a number of items and uses about as much electric as a light bulb.
It ain't cheap and it ain't as light as a slow cooker, it does have a carry handle but most important it works as advertised. The steam from it is no worse than a pan of boiling water.
We have a small one that stacks inside it's self.We use it in the awning and leave a vent open when cooking.I also put my slow cooker out there and my grill.A steamer is lighter than 3 pans!!
We have a Tefal Steamer at home and a Tesco three tier one in the van. Likewise a small slow cooker in the van and a bigger one at home. Wouldn't be without either. Haven't yet resorted to taking the George Foreman Grill but who knows................... It may yet find its way into the van.

Always take the Pressure Cooker with us when camping. It's great for cooking inside a tent as it releases minimal steam - if any, and when the food is ready I release the steam outside the tent. Cooks in a fraction of the time then a steamer or a conventional pan, thus using less gas. It is bulky but well worth it. Also great for cooking stews in under 30 mins.
Another thing I can recommend is Colemans and Schwarz Recipe Mixes which jazz up a meal and take up hardly any room at all.
Another pressure cooker fan here! Who said they were going out of fashion? To be able to do a full beef casserole from scratch in under 30 minutes takes some beating!
I also have a steamer - one of those collapsable ones that fits in any saucepan for the caravan - find it more than adequate. It doesn't steam up the van as you cook with the lid on and I always have the extractor on above my head.
