One day to get from Yorkshire to a southern port 2 maybe 3 days sailing into the med, same for the return that's your 8 days used up so you won't need the van

You would probably be looking at sailing to Santander or Bilbao in North West Spain which is not quite where you want to be.
They are both very expensive crossings and take a long time for the crossing. You would then have to travel quite a distance to get to where you want to go.
I would think that by the time you travel from Yorshire to Portsmouth or Plymouth, where they sail from and then do the crossing, you would be lucky to have four days at your end destination.
Nearest & quickest long route is Plymouth-Santander in northern Spain & from there its about an 8hr drive to the Spanish Med coast & 12hrs to French riviera, not practical for your purpose as the ferry does not sail every day.
It would be quicker to drive via Eurotunnel. From Leeds to St Tropez you are 1000miles, 125€ toll one way car/caravan, journey time 21hrs, assumes no delay at Eurotunnel.

We've been planning to go from Calais to Dordogne and feel that the drive is at least 1 stop over but we are doing it in 2 stop overs each way and I would think it would take a least half a day to get to Montpellier from there. It seems rather a big challenge for you to take on. Hope you have a safe journey.
