It really depends on how much power you use, the capacity of your leisure batteries, the capacity of your solar panel and the length of your stay.
Are you planning to stay on one site, or to tour different sites. If you are planning to tour different places then you have the option of booking a few nights on a site with EHU to recharge your batteries.
Inverters are not very efficient, but again, you do not give the size of your inverter either.
I often manage a long weekend on an 85aH battery, with a 13 watt solar panel connected during the summer. This allows me a few hours TV in addition to water pump and lights. If you are planning to use your inverter to run a microwave, electric kettle, fridge etc then you have no chance. Where possible, use gas for such things. Gas ring and camping kettle for your tea and coffee, fridge on gas, water heater on gas etc. The halogen lights in newer vans use a lot more than the fluorescent ones in the older vans. It may be worth converting some of your lights to LED and just using those as this will save a lot of power.
