Our little ones sleep on either side of the rear dinette - like short single beds. We used to put a bed guard along the one side to stop them falling out but now we just make up the whole double in the back and they sleep side by side. (mine are now 2 & 4 but we started when they were 1 & 3)
We hope not to use the bunk unless we have to when the eldest is a couple of years older. Too much hassle to make up!
Im with you on this one. Just make up one of the seats into a bed, Its what we do with our two year old. A normal size fitted cotbed sheet is usually just the right size for the seat, and we put a tomy folding bed guard along side. Done this with our older two and works a treat. I certainly would not put a one year old in a bunk

Thirded, we used to do that with our swift we had before, trouble was our little monkey used to climb over the top of the bedguard so we had to put pilows on the floor to break his fall
Changed to fixed bunks now, he loves them
