We have the best of both worlds, we wanted fixed bunks as it reduces bed making up and the other bedding goes on it while we are on site, this is how we were using our last caravan leaving the bunks up, but ours also has a side dinette as well as front dinning area so someone can read or play while others watch TV or cook. The other advantage is if arriving somewhere late in the day beds are ready and made up, I wouldn’t want to travel with foldaway beds up as I think it would affect stability.
The size of the bunks matters too ours are a good size, when we re looked at the 6 berth bailey at the time they were quite small and narrow and there wasn’t an area that could be separated off if teenagers need privacy when changing etc
We also have end washroom, though its quite small, it means some one can be in the shower while others are changing in the middle part of the caravan and someone can cook at the front in a morning - it works well for us.
It’s our 3rd caravan and we decided we never again wanted a tip up sink (to many times fishing for lost soap etc), we also didn't want to have to wipe out the shower our get wet feet going to the toilet! We do use our on board facilities quite a lot.
Other things we wanted to avoid was toilet on awning side so you don't have to go thorough the awning when emptying!
Hope that helps - nearly forgot the best piece of advice we had was not to buy a new caravan if its your first, as until you try it you don't know how you will live in it.
