As a rough explanation, the dish is a mirror, reflecting the signal beamed from the sky down onto the LNB,, so while the source (satellite) is higher than the horizon, the target (LNB) is below the horizon; therefore the dish is angled between the two.
If you experiment with dishpointer.com, you'll find the further south you are, the higher the satellite is and the further back toward horizontal your dish would need to be - for example, Reyjavik, elevation is only 7.6 degrees, while Gibraltar is 35.2, Tripoli 48.4, and Eilat 54.7 - if you were far enough south, your dish could be almost flat, but even in those listed above, as the signal is a directed beam, you wouldn't actually receive any signal....
