We use the interlocking mats as is Michael's link. They are easy to put down and take up, can be easily replaced if one is damaged, and are comparatively easy to store. We lay old rugs / carpet offcuts on the areas we walk on most, and it works pretty well.
Others on our site have all sorts of fancy wooden flooring, which is great during the season, but difficult to store when the awning is down.
