Well I've put a deposit on our new to us caravan but there's no mattress on the bunk bed (It's an Elddis Shamal). It's a fold down solid wood base.
Could anyone recommend how I get a mattress for it and what type? Should I just get ordinary foam and where do you store yours?

Took a break like everyone over covid, flogged the caravan and got a campervan!
How much I spent would depend on the weight of the person using it, the frequency of it being used etc. If it's just for occasional use then normal foam would be OK, if every weekend then perhaps consider proper mattresses.

Makro are doing a special offer on Silentnight memory foam mattresses (think it starts this week), getting a single one and cutting it down to size will proably save you a fortune over getting a piece of foam from a supplier, and will be a much more comfortable option.
I think the single ones were about £100.00, getting my front seats re-stuffed with foam cost several times that amount.
These are pretty good and would probably fit a bunk bed quite well! These are child size I think, but you can also get adult size ones. Check the measurements. z beds
When you ask where do you store yours? Do you mean overwinter (in the house?) or do you mean in the caravan. Fold up bunk bed matresses are often used as the 'back' of the seat below. Thinking about that one, are you sure the back of the seat below (the bottom bunk) isn't meant to be used on the top bunk when they are assembled?
If that's not possible in yours, just store it over the top of the bottom one and cover with a throw, then use it for sitting on.
I had a similar problem when we bought our used 'van and ended up buying 4 * 50cm foam blocks of 10cm thickness for our pull down bunk. When not in use they store perfectly under the seats and are comfortable enough for our 12 year old. We use a fitted single sheet on top which is a nice tight fit.
For our bunk we have 3 x double foldout blocks of foam which are stored under the seats. If you do to a dealers and look in cupboards or under the seats you'll see them, they're usually grey.

ours is same just thick foam x 3 as supplied by bailey.a breathable child's pillow is a must though.

There are definitely no foam bits hiding anywhere.
The layout for the bunks is 2 single seats and a table in the middle. I haven't put it all together yet but as there are 2 seat bases and 2 backs, I thought they would make the bottom bunk and look about the right size.

Dunhelm mill shops sell the foam blocks that are ideal for making a bunk base cushion, they also sell reasonably priced fabric to cover them, or extra large square pillowcases that do the job in their larger stores. you will need 4x24x22insx4 deep approx to make a top mattress, they retail at around £6 each, or at least they did when i bought some last year.
They should store under your rear dinette bed bases quite easily when not in use, but having said that ours got used for chair cushions in the Awning during the day,
