I too usually use 2 aquarolls, but one is borrowed, so I may go back to one.
I'm being very decadent though as I am, in fact, a solo camper/caravanner. I find the big 40 litre one will last me about 2 days, but the old 29 litre one is handy if I use the shower, then tip what's left into the big one & refill the little'un.
I have heard people in the past say they've gone back to using just one. I can understand this, as you still have to fill up just as often, it's just that when you do run out, it's less of a hassle.
If you're right in the middle of something when it runs out, the 2nd aquaroll just gives you a chance to refill when it's convenient to you.
It is quite an expense though, especially for me.
What I do, when I've only got the one, is just check it every now & then, when I think it may be running low, & refill as necessary.
I don't think I've actually ever ran out of water in my 'van, as I'm always aware of how much I've got, or should have.

We only use one now, we keep it topped up with watering can. We noticed the Dutch always do it this way.

I doubt if people sterilise their watering cans though before topping up their water barrels with fresh water.

I only use one and we use the shower in our van, that said we do now have an onboard tank and I have got into the habit of filling that up as well as having a full aquaroll, just one of my daily jobs and I'm happy for the exercise! Must admit I'd rather get fresh water on a regular basis than have water sat in a 2nd aquaroll, particularly on a hot summers day. Also the thought of carrying another aquaroll and cleaning/bagging it when packing away is something I can do without... my mind trips back to York a couple of weeks ago when it was belting down...

If you have 2 rolls, don't you need 2 waste hogs too to stop it overflowing?

Not necessarily. I always find the waste container & fresh container(s) are always out of sync anyway, especially on my 'van, as I need 2 waste containers. I have one outlet at the back & 2 round the side.
the other day I replaced my waste hoses & put them all round the side, but now the kitchen sink (the one with the long run) takes ages to empty, which pretty much answers my question of "why do it like that in the first place?"
