We always remove the panels from ours and store these in one of the underseat lockers in the caravan. This makes it easier to handle if it's windy as the storm straps are the last thing I take off before we pull the canopy out of the rail.
We then pull our awning out of the awning rail so it ends upside down on it's roof laying on the awning carpet. We then fold in any of the legs leaving the one which is now at the front of the caravan out straight in line with the side of the caravan.
Then starting at the flet edge furthest away from the van fold it in a third of the depth of the awning & then do the same again folding it towards the caravan. This leaves you with the awning canopy upside down on its roof and just about a third of its depth laying in line with the caravan.
Go to the rear end of the van and pick the end of the canopy up, flod it towards the front of the caravan any distance you like, I like to do this about a third of the length and the rol it up very tight until you reach the end which will be the panely zip section/leg.
Then, when we want to put the awning up, we lay the groundsheet/carpet down & secure it down if need be. Place the rolled up canopy at the front end of the van & feed the convertor rail through the awning rail on the van, it'll unroll nicely as it goes through the rail and will end up right side up.
I've been used to handling large lorry and rick sheets all my life so folding them up so they remain easy to use comes easy to me & that's how we've always do our awning. My mate won't even try it & the mess he gets in is worth paying to see
