Caravan legs are for sapport not really for full sapport of caravan.

caravans are to be used and not left behind.

just secure it as best , if you have insurance then no worries.

i just have a wheel lock and a cover, hides the look of the caravan, makes it less of a target

I am not sure its sensible to remove the wheels. I can understand why you are thinking of doing it but it would mean that in the case of a fire near the van it could not be moved. Like Michael says you would also need to check with your insurance company as many of them don't allow the use of winter wheels where the van becomes immobile.
