The lava rock bbqs are sort of a half way effort. You don't get charcoal flavour but what you do get is the fat from the meats dropping down onto the rocks, which the absorb and let off as smoke which smokes the food in its own smoke. It's not a bad flavour though not the best.

I'm on the side of team CADAC - not cheap or light but invaluable. Had ours for 5 years now and have definitely had our money's worth. We use CC sites mostly and note that CADACs (in their various forms) seem to be a must have accessory which speaks volumes. There was a batch of dodgy griddle plates around a couple of years back, which weren't non-stick, my mate was unlucky enough to end up with one but CADAC replaced them FOC.
Highly recommended in my view the advantages outweigh the smokey flavour and burnt black bangers of a charcoal BBQ.
We have a Weber Smokey Joe which cooks the food great and is easy to transport. Also, hubby has found the charcoal in the instant light bags to be best (not Weber's own briquettes) and also we use a small kitchen blowtorch to light it as it's much better than matches if there's a slight breeze :)
We have a Safari chef Cadac on Gas bottle and its the best caravan item we have purchased. There is absolutely nothing i have not managed to cook on this thing its so versatile. We have the roasting pan to go with also.

Well I am one of those that swear it makes a difference to the taste, I have to BBQs with them and it always tastes nice.

For getting the lump wood or brickets going v quickly use one of the weber chimneys. They reduce the time to get the fuel to the right temperature drastically.
The chimney also means you can effectively use non lighter fluid impregnated lump-wood quickly, therefore removing the chemicals from the equation and improving the taste more again.
I used to swear by charcoal BBQ's until the in-laws bought us a gas BBQ. That one's long gone but today we use a Weber gas BBQ. They are quick and clean. To get good flavour, I take a sheet of tin foil about a foot square and put in a handful of thyme and rosemary sprigs from the garden as well as some hickory wood chips. I wrap it into a parcel, leaving just a small gap for the smoke to escape. I put the foil parcel on the BBQ on the corner of the grill and when it starts to smoke, I start cooking. Works a treat and there is nothing like the smell of the herb and hickory smoke mingling with the scent of a steak cooking .... I do still use a charcoal BBQ from time to time but it takes longer to get to the 'ash' stage you need for cooking. I never use lighter fuel or the disposable BBQ's that have the chemical-impregnated paper that you light. These chemicals taint the food in my opinion even when you think they have all burnt off.
Gas verses Charcoal, no contest, tried both and Charcoal wins hands down.
But apart from the cooking side of things we have a unit which is low to the ground and ideal for burning small logs on. My missus thinks it romantic sitting round a log fire in the evenings with a nice glass of wine. Me, I think it’s better than just sat there freezing and the smoke certainly helps annoy the mossies.
