We cook basic meals when in the caravan, I thought the idea of caravanning was to take it easy, not take all the cooking problems with you. When we cook a Sunday roast or a chilli etc I make a large panfull or a large roast, use what you need for your meal, put the chilli or whatever in freezer containers, also same with the meat,slice up put in container with gravy and freeze it When we go away we take out a selection of frozen meals, put them in the caravan freezer then just take out what you fancy then just boil up veg or pasta-rice for chilli or spag-bol, easier than starting from scratch, you chill-out while your food thaws out.
We always make a cottage/shepherds/fish pie the day before we go. When we pull up at site, level up, gas on, oven on and pie in. By the time we are set up there is a nice meal waiting for us. Crack a bottle open and relax we too have done full Sunday roasts but also done simple pan fried pork steaks with some new potatoes and per prepared veg from the supermarket in microwaveable packaging. Again, chilli and spag Bol frozen before you go makes for a quick meal. Another we have done is lamb steaks with onion, mushroom and tomatoes. Just bung it all in an oven dish, cover with foil and leave in the oven for as long as you want, just a splash of water every now and again.
Also take our slow cooker for in the awning. Can do all sorts in those without too much fuss.

hallogen oven for us too. also slow cooker. no hassle cooking. you can even do a roast chicken in a slow cooker by bunging in unpeeled whole spuds, carrots etc. bung whole chicken on top, couple oxo cubes and put lid on etc, 3 hours later, succulent roast chicken with gravy. also this wont trip out the electric should you want to boil kettle etc.
only problem I find in my van is the lack of prep space, and the size of my oven,
That said, if its not too cold I can roast on my gas BBQ.
otherwise I can cook what I like.
I was watching a tv program last week, diners, drive-in & dives, on food channel, some of the food they turn out is fantastic on a couple of burners. I wanted to be a chef when I was younger but not good enough, but I am a good cook, but the program put a slant on fast food but simple to do, worth a viewing.
We generally go away for 4 days at a time apart from our main hol to france so I usually make a chilli, a curry, and a cottage pie, freeze them and then just take rice, spuds, a bit of veg and naan breads, we usually have 1 meal out either lunch or supper, in the summer this is replaced by meats that have been marinated and then frozen and then we just barbecue each evening and serve with salad and new potatoes, very simple and easy to do in caravan. We bbq on a Cadac. j x
