I think that the real reason that most folks hire domestic fridges on campsites is because they are bigger!!! And they sit outside.

The problem with having a compressor fridge in a caravan is that a caravan is a box and any machinery that is running in a box, be it a fan heater or a small compressor, makes much more noise than if it is sitting on the ground (tent) or in a house kitchen (away from the sleeping area).

With the prices that they are charging for caravans these days, I doubt if costs really comes into it. If people wanted compression fridges, manufacturers would be fitting them.

Compression fridges have their place, but most caravan owners still prefer the freedom of choice, hence heating and refrigeration that can be used in a multi fuel option.
