You can get a sub 1500kg car and tow plenty of vans around 1300kg.
The van maybe 1800kg with a driver and fuel giving you less carrying capacity than towing with a car.
The van will also restrict you in other areas also.

Have you taken into account the wheel arch intrusion?
How are you going to get it out and back in?
Where are the water, gas and electrics going to be?
How will you get enough headroom?

The idea is good,but simply not big enough.May aswell use a trailer tent or throw a tent in the van.
