We've just bought our first caravan and we went for a fixed bed. My husband is 6 foot 4 1/2 inches (the half is always important). He sleeps with no problems.
Although we bought via a private sale, we went round a local dealer and had a lie down on the different beds. We also took a tape measure as some of the beds only make up to a small double size.
Once you know the make and model and year you should be able to get specifications online.

In terms of length beds you make up from the front seats will be virtually the width of the whole 'van, so comfortably over six feet and probably around seven feet long.
In terms of width though they vary enormously. 'Vans with fixed beds or with a second seating area (but not the 524 configuration dinette) can be monly a three quarter bed than a double. Others though can be a proper King-sized width.

I am 6 foot 4 inches and I have to use the front bed made up so that I sleep across the bed.
However our van is a 4 berth and the wife sleeps on the dinette/bed which is 6 foot exactly.
As we prefer single beds so that we do not waken each other during the night, I have widened the dinette bed to a more normal single bed size (I added 6" to the width)and when I make up the front double, I make it up as an extra wide single.
