I'm guessing from your message that you haven't seen inside many caravans - sorry if this is wrong.
We found that the best way to choose a layout is to visit a show (e.g. Lawns Show in Hull in September or Birmingham NEC in October) where you can look in as many caravans as many times as you like without any pressure or obligation. Just sit down in them and see if it feels right. In our experience other visitors to these shows are really friendly and will be happy to share their own experiences.
Where you go from there really depends on how much you're looking to spend. The larger dealers tend to have a wider choice of modern stock but are obviously more expensive. There are plenty of smaller dealers who advertise second-hand stock on ebay - Select Caravans near Nottingham was among the best that we visited but not particularly local for you. Take a check list, look for damp everywhere and if there's something that doesn't seem right, don't be afraid to grill the seller about it.

We are picking up our second van from Stewart Longton Chorley this Saturday.
They are a very honest bunch and have a huge selection of used vans of all shapes & sizes.
Ask for Neil Holden he has been there for many years and is very knowledgeable and i'm sure will offer some good advice.
Campbell's caravans near Preston has a huge number of used vans on display. You can wander in and among them freely, sit in them, look in cupboards, see if you can fit in the bathrooms etc and generally compare sizes and layouts. They stock mainly, though not exclusively used Lunar, Bailey and Swift vans, though do have odd examples of other makes. You can also check out stock on their website, though nothing beats getting the feel of a van in person.
We bought our caravan from Stewart Longton in Chorley, having been to nearly all our local dealers, we found they had such a good choice, and different layouts that it was nice to see them side by side (we did go to NEC, but felt over whelmed)
When we went the sales guy just left us to look around and play about for a long time, they also held the caravan that we chose for 24 hours so we had time to come home and measure our driveway to see if we could get it on for storage. The handover was also very good on the day we picked it up.

That's good to know we have seen a couple at Stewart Longton online in Chorley and Standish so are going to have a look this weekend
What have you gone for, the ones we like the look of have two single fixed beds

What have you gone for, the ones we like the look of have two single fixed beds
We've gone for a 4 berth fixed bed with a full washroom at the rear. After having our twin-dinette 5 berth for 4 years we've decided that a fixed bed layout suits our needs better - having the wardrobe & bathroom in the middle of the van has tended to create a narrow, cramped and awkward area.
The vans at SL are kept locked so the best way to do it is to look around and decide which ones you want to look in and go ask for them to be unlocked - the salesmen won't hassle you they just leave you to look around.
We are in the same boat as the OP and have been looking round dealers SL being one of them, after sitting in many vans we have been able to rule out certain ones and have now decided on exactly what make and model is more suitable to our needs and tow weight etc. We will be out and about this weekend hopefully to finally purchase one, I am glad we have took this time to get it right.
Our only problem is finding storage at the moment
